The Farm La Valletta is a winery that was
established in 2002. The estate originated from an old farm set among
the hills of Lorenzana, in province of Pisa, and for several years has
been producing wine with respect to the rural and farm tradition typical
of this region.
The area is a part of the Tuscan coast that benefits from the
influence of the nearby Tyrrhenian Sea. Here we find optimum conditions
for viticulture thanks to Mediterranean climate, mild winters and
summers tempered by sea breezes.
At present, the Winery is producing native red berry grapes like
Sangiovese and Colorino Toscano, as well as international varietals,
including Merlot and Cabernet Sauvignon. Moreover, we have tried to
plant small quantities of grapes which have been cultivated since
ancient times in our territory.
Our philosophy aims at the highest level of quality, the yield of grape
per plant is quite limited and grape harvest is strictly done by hand
after precise selection of the best grapes in the vineyard. Afterwards,
grapes are sorted twice in the cellar. Vinification occurs under
controlled temperature according to traditional methods with repassing
of must over the grape dregs and délestage.
Refining of wine takes place entirely in differently toasted French oak
Barriques originating from the region of Allier. The possible presence
of sediments in the bottom of the bottle is a sign of the naturalness of
the product.
